Scallion Potato Pancakes

Wash the potatoes first, put them in a steamer and steam until cooked through

After cooling, peel off and press the back of a rice spoon into mashed potatoes for later use

Chives, chopped green onions

Beaten eggs

Add glutinous rice flour and stir evenly in the same direction with chopsticks

Add mashed potatoes, sprinkle with salt, black pepper, chopped green onion, and knead into mashed potatoes dough

Divide the mashed potato dough into a number of equal parts, and round them

Use the palm of your hand to flatten the dough into a cake shape, add oil to the pan and heat until 70% hot, put the mashed potato pancake in the pan, and fry on medium heat

Fry until golden on both sides
Tips:
Add glutinous rice flour if you like it softer, or add flour or sticky rice flour if you like the tougher taste.
