Scrambled Eggs with Pleurotus Eryngii

2 Pleurotus eryngii, 4 eggs, 1 green onion.

Beat the eggs.

Cut part of the eryngii mushroom into plum slices, part of the thick shreds, and shred the green onions.

Heat a frying pan with a little oil on medium heat and start frying eggs.

The eggs are fried and served.

Reheat and add oil to fry the shredded shallots.

Add eryngii mushrooms and stir fry.

Pleurotus eryngii is very watery and can be simmered for 1 or 2 minutes with the lid on.

Finally, add the fried eggs, salt and all-spice powder, stir fry evenly.

The scrambled eggs with eryngii mushrooms are delicious.
