Secret Oil Splash
1.
Use a food processor to grind the chili into powder, not too fine. (I personally like to grind the chili powder by myself. I always feel that the color is not correct when I buy it outside. The powder is either too coarse or too fine. If you think it is troublesome to grind yourself, buy the chili powder directly)
2.
Add pepper powder and salt to the chili powder.
3.
Add sesame oil and mix well, soak the powder completely. You can also add balsamic vinegar to mix well, it tastes good too
4.
Pour vegetable oil into the pot and turn off the heat until there is a larger amount of smoke. (The oil temperature is high, it is not recommended to use a coated pot, but use an iron pot)
5.
When there is no smoke, add ginger, pepper, and star anise. Turn on a low heat and slowly fry until fragrant. Then remove the ginger, pepper and star anise.
6.
Slowly pour the oil into the chili powder mixture and stir well.
7.
Pour into the pot, add the cooked white sesame seeds, turn on the heat, and simmer while stirring slowly. The teacher said at the time that it would be simmered for half an hour. I used it for ten minutes, and it felt very fragrant, so I turned off the heat. Note that it is gentle
8.
Cover the pot and simmer until cool.

Tips:
When boiling, the fire must be low, and it must be boiled while stirring.
