Pour sugar, maltose, and baking soda into a bowl, add boiling water and stir well, add sesame oil and continue to mix well.

Add flour and knead into a dough.

Put the dough on the cutting board and knead vigorously until the dough is smooth and elastic.

Mix the fillings well.

Divide the dough into dough pieces of the right size.

Take one and roll it into a piece.

Put the fillings and wrap them carefully.

Place the joint underneath. Dip a little red yeast rice with the cap of a mineral water bottle and cover it with a red mark. Put it in the preheated oven, 200℃, middle level, and bake for 25-30 minutes.

Until the surface of the moon cake turns reddish brown.

Let cool and eat.
Tips:
The filling ratio is not too strict. I used the leftover fillings for the five-ren mooncakes, and added sweet-scented osmanthus, rock sugar and green red silk. If you want to make a strict traditional self-made red, you can refer to "Junzhi" The teacher's prescription.
