Sesame Sweet Potato Crisps

Prepare the materials

Sweet potato diced and steamed

Use a fork to mash the cooked sweet potatoes into a puree and let cool for later use

Let the butter soften at room temperature, then cut into small pieces and put it in low-gluten flour

Put on gloves and use your hands (or use a fork) to mix the butter and flour into a grain of sand, taking care not to melt the butter

Add salt, sugar, and sweet potato mash and mix well to form a dough

Put the dough in a fresh-keeping bag (so that it won’t be sticky), and roll it into a rectangular slice about 3mm thick

Brush a layer of egg yolk liquid (1 egg yolk + 1 tablespoon of water) on the surface of the rolled rectangular dough, evenly sprinkle with black and white sesame seeds, and cut into equal width strips

Cover the oven with greased paper

Arrange them on top and preheat the oven at 170 degrees for 10 minutes

Put it in the preheated oven, in the upper and middle level, and bake at 170 degrees for about 35 minutes, do not take it out immediately after baking, leave it in the oven and simmer until it becomes completely cool (baking time and temperature are for reference only)

Tips:
1. When mixing butter and flour, use a fork to reduce the excessive melting of the butter due to the temperature of the hands (but it is winter, so I use my hands);
2. When rolling the dough, put it in a fresh-keeping bag or spread a fresh-keeping film on the surface, which can prevent the dough from sticking and roll it better;
3. The baking time and temperature are for reference only, and can be adjusted according to your own oven conditions and the thickness of the biscuits;
4. Leave the baked biscuits in the oven to cool, you can use the residual temperature to further dry the excess water in the dough; if it still feels soft after being completely cooled, it is because the baking time is not enough and more water is retained. You can return to the oven and bake at 150 degrees for a few minutes until it becomes crispy after cooling;
5. Because sweet potatoes are inherently sweet, the amount of sugar can be increased or decreased according to the sweetness of sweet potatoes.
