The raw materials of the cake: eggs, ordinary flour, corn starch (ordinary flour and corn starch have been mixed), white sugar.

Separate the egg whites from the yolks and place them in two oil- and water-free basins.

Add 5 grams of white sugar to the egg yolk and 15 grams of white sugar to the egg whites. Put the egg white bowl in the refrigerator freezer for storage.

After the egg yolk and sugar are evenly stirred, add pure water and mix well.

Then add the sifted ordinary flour and cornstarch, and stir evenly with a spatula.

Cover the mixed egg yolk paste with plastic wrap and set aside for later use.

Remove the egg white bowl from the refrigerator and add salt and white vinegar.

Beat with an electric whisk until it is dry.

Take one third of the egg white paste and mix with the egg yolk paste, and stir evenly with a spatula.

Pour the mixed egg yolk paste back into the egg white bowl, and mix well again. Preheat the oven up and down to 130 degrees.

Put the mixed batter into a mold and shake it on the table a few times.

After the oven has been preheated, put the mold into the oven. Bake at 130°C for 25 minutes, and bake at 150°C for 12 minutes. After the cupcakes are evenly colored, turn off the heat. (When baking, I put a bowl of water.)

The baked cupcakes are upside down to let cool.

Prepare mangoes, walnuts and yogurt.

The walnuts are shelled and the flesh is removed, and the mangoes are peeled and cut into small pieces.

Spoon a spoonful of yogurt on the cupcakes, top with mango and walnuts. Just decorate with a heart-shaped insert.

Tips:
1. Fruits can be added with other fruits according to your preference.
2. The temperature of the oven should be set according to the characteristics of the oven.
3. Walnuts can also be replaced with other nuts.
4. I used 2 large eggs to make 9 cupcakes.
5. There is no low-gluten flour, I used regular flour and corn starch.
