Shepherd's Purse Cake

Pick off the yellow and old leaves of shepherd's purse.

Boil water in the pot, put the washed shepherd's purse into the pot and blanch it.

Remove the boiled shepherd's purse and remove the water.

Then chop the shepherd's purse and place it in a bowl. Add salt and eggs and stir well.

Then put the flour into the bowl and stir to make a paste.

Put a saucepan on the heat and add a little salad oil. When 60% is hot, pour a little batter and dilute it.

In the process of soldering, it is best to close the lid. This makes it easier to bake. And only one side can be burned.

Cut off the untidy sides of the blanched pancakes and place them on a plate, and serve with black rose pickles. (The trimmings were eaten by me first.)
Tips:
The shepherd's purse should not be too long during the blanching process, otherwise it will not be fresh.
