Fresh shepherd's purse is already on the market. Today, I went to the vegetable market and saw wild shepherd's purse on sale. I bought some to make shepherd's purse spring rolls with fresh meat.
The deep-fried spring rolls are so crispy and delicious that you can't stop your mouth. Come and try it.

Shepherd's Purse Fresh Meat Spring Rolls

1. Wash the shepherd's purse and remove the old stems.

2. After blanching, put it in cold water to cool

3. Squeeze out the water a little and chop for later use.

4. Add minced green onion and ginger to the meat filling, a little sugar, a little salt, a little white pepper, sesame oil and other seasonings and mix well.

5. Put the cut shepherd's purse into the meat and add an egg.

6. Mix well into fillings.

7. Take a piece of spring roll wrapper and spread it out, and put an appropriate amount of filling on one corner

8. Fold up the bottom as shown in the picture

9. Fold both sides and paste on top.

10. Finally, roll into a flat round packet, and the spring rolls are wrapped

11. All are packed in turn.

12. Put oil in the pot and heat it to 60% heat. Turn to medium and low heat and fry the wrapped spring rolls one by one until golden.

Tips:

1. You can make more at a time, put it in the refrigerator and fry it directly when you eat it, which is very convenient.
2. The batter used for sealing is (water + flour) and mix thoroughly to form a thick batter.
