Shepherd's Purse Minced Meat Omelette

Material map (the actual amount of shepherd's purse is more than this)

Boil a pot of boiling water, pour cooking oil and salt after the water is boiled, and blanch the shepherd's purse.

Take out the water when all the color changes.

Grind a small amount of minced ginger and chopped green onions into the minced meat, add the light soy sauce to the cooking wine and mix well with salt.

Squeeze the shepherd's purse to remove excess water, chop it into a bowl, add the previously mixed meat, add light soy sauce, salt, sugar, second seasoning, top with eggs, and mix well.

According to the temperature of the filling, add a small amount of starch and mix evenly.

Pour the oil in the pan to heat up, pour out the oil and add the oil again, (this process requires broiling the pan) to heat up, and then pour the mixed filling.

Fry on a low fire until fragrant, turn over gently after setting the shape and turning yellow.

After all the pan is fried, change the knife out of the pan.
Tips:
It tastes best when fried with pork belly filling.
Use a low heat throughout the entire process to avoid mixing the bottom and causing it to grow.
