Shiitake Mushroom Sauce

Soak shiitake mushrooms in clean water overnight

On the second day, pull off the shiitake mushroom stalk and cut into large pieces

Use the big hole part of the meat grinder to wring it

Dice pork, finely chop green onion and ginger

Stir-fried pork diced in hot oil changes color

Saute the minced ginger

Add shiitake mushrooms and stir fry

Then add the soybean paste and stir fry for a few minutes

Pour some of the water for soaking shiitake mushrooms

After boiling, turn off the heat and simmer slowly

Boil until the water is dispersed and lose two-thirds, add the chopped green onions, stir well and turn off the heat (I have boiled for 25 minutes)

Serve in a bowl

Today I have noodles. I chopped the shredded cucumber and blanched toon and topped it with the mushroom sauce.
Tips:
Be sure to stir it from time to time when it is consuming water, or you will love the bottom of the paste and also love the collapse.
