Shredded Bamboo Shoots with Green Onion Oil

Wash the shredded bamboo shoots and shred them.

After the oil is hot, add chives, Chinese pepper, and dried red pepper to make scallion oil.

Fry until the chives turn brown, remove all the solids, and leave the oil for later use

Pour 15ML of cold vinegar and 15ML of white sauce into the cut bamboo shoots.
5.
Pour 15ML of scallion oil.
6.
Add 1 teaspoon of sugar.
7.
Add 1/4 tsp of salt.
8.
Mix all the above seasonings well, and serve on the plate.
