Shredded Beef with Lettuce and Pickled Cabbage
1.
These are the main ingredients~! When using sauerkraut, only the dried vegetables are used, and the leaves are cut and used again~ (because the homemade sauerkraut is salty and sour, so it is washed with cold water before use)
2.
Add sliced ginger and garlic to the shredded beef, a spoonful of bean paste, half a spoon of salt, a spoonful of water starch, and a spoonful of cooking wine, mix well and set aside. (Because the bean paste itself is slightly salty, please add salt according to the actual situation! Cooking wine only needs a little bit, don't put too much~~ The ginger and garlic have been mixed in, so you can't see it.)
3.
After the lettuce is peeled and shredded, add a spoonful of salt, mix well and set aside for later use. (As you can see, the spoon used to scoop the salt in our house is very small, so you should pay more attention to the half spoon mentioned in the previous step! Remember not to put too much... The salt here must be mixed with the lettuce, so that In order to make the lettuce taste uniform~ Of course, if you like to eat a lighter taste, you can ignore the step of adding salt~)
4.
Cut the green pepper and dried sauerkraut into shreds and set aside.
5.
After completing the fourth step, rinse the shredded lettuce 2-3 times with cold white boil, drain the water, and gently squeeze the excess water out with your hands to prepare the stir-fry. (Please carry out the above steps in order, which saves time~)
6.
Add some oil in the hot pot (vegetable oil, salad oil, etc.), wait until the oil is almost hot (put a few peppers down, there are many small bubbles around it indicating that the oil temperature is right), turn off the beef and turn off the heat. (The fire is too big. If the beef goes down, the oil is easy to splash around)
7.
Stir-fry beef takes a short time, and it will get old after a long time. Just see the color of the beef change~
8.
After the beef has changed color, add lettuce and sauerkraut and green pepper shreds, and stir-fry together for 1-2 minutes (medium or high heat is used here). If you like to eat softer lettuce, you can sauté it for a little longer. (Please don't put salt, soy sauce and other condiments!!!) When you start the pot, just put a spoonful of MSG~! !
9.
The sauerkraut leaves mentioned before can be torn into small pieces, mixed with a little MSG and chili oil, the taste is super good!
Tips:
Because the ingredients have been seasoned when the ingredients are being processed, do not add salt or soy sauce during the cooking process! This will make the dishes too salty! If the taste is not enough when cooking, please add salt.
Stir-fried beef tends to grow old for a long time, so the whole process of cooking should not be too long!
The overall taste of this dish is relatively strong, and you can consider a lighter taste when you pair it with other dishes, such as some stir-fried vegetables or soups.
In order to look better, green peppers can also be replaced with red peppers. If you can eat spicy food, you can use millet, and if you can’t eat spicy food, you can use sweet pepper~
If someone doesn't like the sour taste of sauerkraut, you can remove the sauerkraut; if the sauerkraut tastes too salty or sour, please wash it several times with a cold boil!
