Shredded Pork in Beijing Sauce
1.
Cut the pork sirloin into shreds (it is said to use tenderloin, but I think it is better to cut the sirloin, haha), and feed it with cooking wine, soy sauce, and starch.
2.
Then cut the dried tofu into cubes, mix the sweet noodle sauce with sugar and sesame oil, and put them on the steamer to steam for 5 minutes. Cut the scallion into inch pieces, then shred.
3.
After the pan is heated, pour the oil, pour in the marinated shredded pork, quickly scatter, and fry until the shredded pork becomes discolored and is ready. Leave a little oil in the pan, add a little ginger, pour in the steamed sweet noodle sauce, add a little soy sauce, stir-fry well, then pour in the fried pork and stir fry.
4.
When all the shredded pork is evenly covered with sauce, it can be served on a pan. You can eat it directly with shredded green onions, or you can roll shredded pork and green onions with tofu skin.
