Shredded Potato

1. Ingredients preparation:
Cut the potatoes into thin strips, the thinner the better;
Mince ginger/garlic, shred green/red pepper;
Minced shallots;

2. Water to remove starch:

Important points:
When cutting potato shreds, cut them as thinly as possible. Fineness directly determines the taste of potato shreds;
Do not blanch the potato shreds for too long;
If you want the potato shreds to taste crispy and refreshing, blanch it in cold water and put it in the refrigerator for a while!!!
