Shredded Potato Fried Rice
1.
Potatoes, peeled, and shredded; washed three times with water to remove excess starch; soaked in water; (I made two potatoes together, and only used a small spoonful of fried rice;)
2.
Heat the pan, add oil, add garlic and red pepper, stir fragrant, don't paste it;
3.
Pour in the potatoes, drain the water, and stir-fry; when the potatoes become transparent, they are almost done. I will serve them first; set aside;
4.
Heat a pan, take another non-stick pan, put a little oil, take a small spoonful of fried potato shreds, put it in the pan, and stir fry;
5.
Add a bowl of leftover rice. If the rice feels a little hard and cannot be crushed, you can pour in a little water, simmer, and then use a spatula to squash, crush, and stir-fry while pressing;
6.
Stir fry, the rice is one by one, the particles are even, not sticky or lumpy, add a teaspoon of salt, and stir evenly;
7.
Finally, add the chopped green onion and chicken essence, and it will be out of the pot;
Tips:
There are two potatoes in the amount. In fact, fried rice only uses a small spoon, and a bowl of rice does not use so much potato shreds; when frying potato shreds, because the rice is added and continue to fry, there is no need to fry too much; fried rice, use leftovers The rice is too hard and can be poured into water, but not too much, it is better if there is no water after it is simmered;
