Shrimp Steamed Custard

Ingredients; mountain eggs, prawns.

Peel the prawns and pick out the intestines.

Pour in the cooking wine and the flavor is very fresh, marinate for a while.

Beat the eggs well.

Pour in half a cup of cold boiling water and add salt.

Strain directly into the steaming bowl with a slight net.

Seal with plastic wrap.

Fill the steamer with water, turn to a low heat after the high heat is boiled, put it in a steaming bowl, and steam for 10 minutes.

For 10 minutes, the custard has just set a little bit, and the shrimp is placed on top.

Cover with plastic wrap, turn on the steamer, and steam for another 5 minutes.

Tips:
Use cold boiled water for clear water, and be sure to keep it warm or completely cold.
The prawns are slightly marinated with cooking wine and very fresh, fully flavored, and the fishy smell is removed.
The egg liquid needs to be filtered to be fine and without holes.
Be sure to use a low fire when steaming,
Shake the pot a little, and place the prawns after the egg liquid has solidified. The prawns will cook quickly, and they will be fully cooked in 5 minutes.
The taste is extremely fresh and can fully increase the flavor of the custard. If you don't like it, you can replace it with other umami agents.
