Sichuan Style Hoof Flower Soup

Rinse the cloud beans and soak for 12 hours.

Rinse the trotters and chop them into small pieces.

Add an appropriate amount of water to the pot, add ginger, white wine, and bay leaves to boil the water.

Use a colander to remove the blanched trotters.

Add the right amount of water to the stew pot and put the trotters in the ginger. Bring the ginger to a high heat and turn to medium heat to simmer.

Stew the pig's feet until slightly white, add the cloud beans and continue to simmer over medium heat until the pig's feet and cloud beans are soft and rotten (total simmering time is about 2 and a half hours)

Use the time for stewing the pig's feet to adjust the water, take a plate and add the spicy pepper, light soy sauce, sugar, vinegar, sesame and minced garlic and mix well.

Add salt 20 minutes before starting the pot, and sprinkle with chopped green onion after the trotters are cooked.
Tips:
1. Soak the Yundou for a longer time. 2. You can also add it to the dipping water that likes to eat MSG. 3. The water used for stewing pig's trotter should be added at once, and no more water will be added later.
