1. Wash the hairtail, cut it, and then use scissors to open the belly of the hairtail to tear off the black film. Rinse the hairtail with running water repeatedly, shred 2 slices of old ginger, and cut 2 small onions into pieces. Mince all the remaining ginger, shallot and garlic;

2. Use appropriate amount of cooking wine and salt for hairtail, stir in shredded ginger and green onion, and marinate for a while;

3. For the marinated octopus, pour out the juice inside, add an appropriate amount of five-spice powder, mix with the octopus evenly, and marinate for about 30 minutes;
