Simple But Not Greasy Braised Pork

Do not put oil in the pan, and place a large piece of pork belly with the skin facing down in the pan. Turn the pan on the lowest heat and roast the skin until golden, so that part of the oily and pig hair can be removed. Cut the meat into small cubes after processing. -If the time is urgent, this step can be omitted.

Prepare a pot of water and blanch the pork belly with cold water (cold water can force more oil out, if boiling water and hot water will directly lock the fat in the meat). Add some ginger and cooking wine. Two minutes after boiling, remove, wash and drain.

The cold pan with cold oil is the lowest fire, about a teaspoon of oil, put in the pork belly and fry with chopsticks until golden on all sides. You can fry a lot of lard fat. The oil is temporarily discarded, and you can fry vegetables or pancakes in the future. -If time is urgent, this step can be omitted, but it will be a lot tired.

Wash the pan again, put rock sugar in the cold pan and stir-fry the sugar shǎi with rock sugar on the lowest heat, and fry until the color darkens and slightly smokes.

Stir fry the lower pork belly so that each pork belly is evenly coated with sugar, and add two teaspoons of salt.

Add green onion and ginger, about two spoons of light soy sauce, and half a spoon of dark soy sauce. Stir well.

Discard the oil again, just transfer the solid into an electric pressure cooker, put a little boiled water, and press for 40 minutes 1 (in the middle 20 minutes, you can open the lid to pick out the green onion, ginger, star anise and throw away, then turn the meat upside down, or omit it). Or don't use a pressure cooker, just use a wok to add boiling water and simmer for an hour. If you are afraid of getting tired, you can throw away the oil again. I am really afraid of getting tired and "abandon the use of oil" throughout the process 😂.

When the time is up, collect the soup and remove the meat. You can see that there is oil that can be discarded in the pot. After 400g of meat is made, only 200g is left. Water and oil account for half of the weight, and the other half is really not greasy.
