Sixi Meatballs
1.
600 grams of pork filling, cut large slices of ginger and green onion, soak in a small bowl of water in advance, a little starch, and a clear egg.
2.
Put a little sesame oil in the minced meat first, and then stir in the same direction.
3.
Pour soy sauce into the meat and continue to stir evenly. Then add the scallion water in portions, adding a little less each time, and after mixing all of them, add the ginger water in portions and continue stirring.
4.
Add a little salt, chicken essence, and egg white, and continue to stir in one direction. Then add the starch and continue to stir until it stops.
5.
Beat the meat back and forth several times with the palm of your hand, and then shape the meat into fist-sized balls.
6.
Pour oil into the pot. When the oil is 40% hot, start adding the meatballs and fry them slowly.
7.
Pour the fried meatballs into a large bowl and set aside.
8.
Put a large piece of ginger and spring onion for soaking on the balls, pour a little soy sauce, and then add an appropriate amount of hot water, and steam it for about an hour.
9.
Put the balls on a plate, pour some couscous soup in the pot, boil and thicken, turn off the heat and pour a little sesame oil, pour the soup on the balls, and serve.
