Smoked Roasted Three Yellow Chicken

Put an appropriate amount of water in a pot on the fire, add green onions, ginger, star anise, bay leaves, cumin and pepper to boil.

When the water is boiled, add an appropriate amount of salt, turn off the heat and let it cool, then add the three yellow chicken to soak, and marinate for about 6-8 hours.

After marinating, put the chicken in a boiling water pot for scalding the skin, and take it out immediately after scalding for 3-5 seconds.

Mix 2 scoops of barbecue sauce, 2 scoops of barbecued pork sauce, 2 scoops of light soy sauce, chopped black pepper, green onion, ginger, and garlic water into a flavored sauce. Spread the inside of the chicken and the body evenly.

Marinate for more than 3 hours.

The whole marinated chicken is hung to dry the skin.

Spread kitchen paper in the pot, put the mixed tea and brown sugar on it, and put it on the iron rack.

Put the chicken on it, cover it, and smoke on high heat. Turn off the fire after turning the pot to yellow smoke for 3 minutes. Do not open the lid and simmer for 5 minutes at this time.

Add a little dried basil to the marinated sauce and mix thoroughly.

The whole smoked chicken is placed on the grill rack and baked at a temperature of 220 degrees. After roasting for 10 minutes, take out the chicken, spread the barbecue sauce on the chicken body, put it in the oven again to bake, and after 15 minutes of roasting, apply the barbecue sauce again.

Bake until fully cooked and the skin is golden red.
