Smoked Spine

Wash the spine and put it in cold water, add all the spices except sugar, salt and tea.

Bring to a boil, simmer on low heat, and add salt after 40 minutes.

Remove after simmering and drain.

Put tin foil in the pot, put sugar and tea in the pot, remove the seasoning and put it on the bottom of the pot.

When the pot is dry and the sugar starts to smoke, put in the spine to be smoked, cover the pot, turn off the fire after about 6-7 minutes, cool down and take out the pot.

Put the finished product on the table, gently break it into small pieces with your hands, and then eat!
Tips:
The seasoning used for marinating can be used as the seasoning when smoking, and it has the fresh fragrance of Chinese herbal medicine.
It is marinated as a whole to avoid breaking the meat. It is easy to break apart after being cooked.
