Ingredients

Soba Noodles Mixed with Vegetables

1. Pick and wash small rapeseed.

2. Wash the carrots and scrape them into thin slices.

3. Prepare soba noodles for one person.

4. Bring the water to a boil, put the soba noodles in it, turn off the heat and soak for about 10 minutes. (I used soba noodles without cooking)

5. When the noodles are instant, cut the seaweed into filaments.

6. Cook the shrimp and remove the shrimp head and skin.

7. The noodles are soaked until there is no hard core and the surface is white.

8. Remove the noodles and drain the water.

9. Boil the rapeseed and carrot slices in a pot.

10. Remove and drain the water.

11. Put all the ingredients in a larger container, add black pepper, salt, light soy sauce, and rice vinegar.

12. Finally, squeeze in a little lemon juice and mix well. After serving, sprinkle in the seaweed shreds.

Tips:

You can change vegetables according to the ingredients on hand.
