Peel the ginger, mince it, put it in the large meat filling, and chop it into fine meat paste. When chopping, you can add some water in portions. If you are not afraid of being tired, you can buy meat and chop it yourself. I am lazy today.

Add seasonings according to personal taste. I added some cooking oil, a little light soy sauce and oyster sauce, a moderate amount of cooking wine, and a little white pepper. Stir well. Beat in some water starch in separate steps and stir vigorously. Some meat fillings like to add an egg, or they can be used to make the meat fillings more tender. Because the meat is also topped with a raw salted egg, the egg white is relatively salty, so my filling is a little lighter. Of course, according to your personal taste, my taste is relatively light.

Take a deep flat plate, put the mixed meat filling, hand dipped in water to flatten the meat filling, press down some in the middle, like to steam it to get richer "soda", you can add some water to the meat filling Minced meat is fine. Because I have already added water many times during the chopping and stirring, I didn't add water this time.

Put a raw salted duck egg in the middle of the meat filling. The egg whites should preferably be completely under the meat noodles. This duck egg is very fresh, haha.

Cover the plate with plastic wrap and poke a few holes with a toothpick. Add clean water to the steamer, add the soda meat, and steam on medium-high heat for about 15 minutes after the high heat is up. The specific time is adjusted according to the thickness of the meat filling

When it comes out of the pot, my meat filling is a little bit too much, the egg white is a little bit less and not all the meat noodles, so steamed out cracks, hehe

The specific steaming time is adjusted according to the amount of meat filling and the thickness of the plate. If you don’t know whether the meat is cooked, you can insert it with a toothpick. If the toothpick is pulled out and there is no minced meat on it, it is usually fine.
