Soda Noodles

Put 1 teaspoon of edible alkali into a bowl, add a little warm water to boil

500g flour in a clean basin

Pour in the melted lye, then add 185g of water and stir evenly with chopsticks

Just form a harder dough (no need to knead it smoothly, the dough is hard and not smooth)

Divide into 3 parts

Take a portion and press the noodle machine into the noodle at level 1.

Repeat several times

Then use the 4th or 5th gear to make a smooth dough

Then press out the round noodles, sprinkle some dry powder to prevent sticking.
Tips:
The prepared alkaline noodles can be boiled in a pot until they are cooked for 7 minutes, scoop it up, spread them out with chopsticks, spread it out, pour sesame oil on it, and put it in the fresh-keeping box, so that it can be kept in the refrigerator for 1 week without being damaged. Just cook it a little when you eat it again!
