Soft Fried Shrimp

Wash the shrimp and remove the shell

Use a toothpick to pick out the gut from the middle of the back of the shrimp

Add a little salt and cooking wine and stir well

Add egg, starch, flour, stir well, if it feels dry, add a little water

Put a little more oil in the pot, heat up and add the shrimps, keep the heat on medium-low

Tips:
The batter of the soft fried shrimp should not be too thick, it can be wrapped around the shrimp. If the batter is too thick, the taste is not good. You can use self-raising powder instead of flour, and the fried taste will be more fluffy. Seasoning, the traditional method is to dip salt and pepper in the ratio of flour to starch at 1:1. The most appropriate frying time should not be too long. The oil temperature should be controlled at about 70%. Do not re-fry, otherwise the oil will become very greasy.
