I made my own glutinous rice filling, and then used Wang Zhihe’s red bean paste to make the bean paste wife cake. Because it takes too long to make the bean paste by myself, it takes too much time to cook and fry, so I bought Wang Zhihe’s Red bean paste.

It should be noted that if you use this recipe to make a wife's pie, the filling and the outer skin must be used together, and cannot be used separately, because the wife's pie has different sizes depending on the recipe.
I chose to make 4 times the amount of wife pie, in which water and oil crust and shortbread are integrated, wife pie crust = water and oil crust + shortbread, used 4 servings, glutinous rice filling is 2 servings, because I I made half of the bean paste wife cake

2. First make the glutinous rice filling:

Tips:

The baking temperature of the wife pie is about 22 minutes at 190 degrees. In the last few minutes, observe the oven. If the color is dark, it must be covered with tin foil, especially the red bean paste filling will be easier to color. After the pie is finished, you will feel it immediately after eating. It is very hard and not tasty. After 2-3 days of oil return, it will be very soft. This wife cake is not the delicious and very crispy, it is the more traditional kind of soft and waxy wife cake. One point is very important. When using a razor blade to cut the cake blank of the wife’s cake, be sure to penetrate the upper skin and cut into the glutinous rice filling (this step is for aesthetics and the other for ventilation. If you don’t cut it, the filling will burst or The wife’s cake has a special drum, which doesn’t look good)
The red bean paste also requires a few strokes. I didn’t do it in the first set. It turned out to be as ugly as table tennis.
