Sour Plum Fried Rice

Because I am a boy, the amount of rice to prepare is two bowls. It is best to store the rice from the previous day in the refrigerator. If it’s cooked right now, don’t put too much water. After cooking, put it in the refrigerator for half an hour until the rice becomes cold. If sour plums are not too sour, use two, just use the more sour one. Core and chop, mix well with rice.

Beat two eggs in a bowl, and use chopsticks to mix the egg yolk and protein evenly.

Heat the pot on high heat until there is no water in the pot. Put in an appropriate amount of peanut oil and use a spatula to remove the oil so that the whole bottom of the pot has a layer of oil to prevent it from sticking to the pot for a while.

Turn to medium heat, and slowly pour the egg mixture, stirring while pouring, so that the eggs are relatively slippery. After pouring, stir and fry until you see that the egg is basically not liquid.

Pour the rice mixed with sour plum in the first step and stir fry. After the ingredients are stir-fried and mixed, put in an appropriate amount of soy sauce and continue to stir-fry. When the rice grains separate, the rice grains will jump up when they are not stir-fried, and you're done.
Tips:
If you have chopped green onion at home, put the white onion and rice together. When the rice grains separate, the chopped green onion can be put in and fry for a while.
