I often see rice noodles in the snack bar. I have eaten it a few times, and the sour and spicy taste attracted me.
Just when I had rice noodles at home, I used my own sauerkraut to make sour soup rice noodles. The sour and slightly spicy taste and the chewy texture of rice noodles are what I want.

1. Ingredients: rice noodles, spring onions, coriander, and sauerkraut (the Northeast pickled sauerkraut is used, which is pickled at home)

2. Scallion, chopped green onion, chopped coriander, shredded sauerkraut

3. Add water to the pot and bring to a boil, add the rice noodles to a boil, turn off the heat in 5 minutes, remove the cold water and set aside

Tips:

1. If you don't have sauerkraut at home, you can buy bags of sauerkraut from the supermarket.
2. If you like to eat spicy food, you can add dried red pepper when frying. I added Pixian bean paste and it tasted slightly spicy.
3. Cook the rice noodles first, and let them pass in cold water to avoid sticking of the rice noodles.
4. Store rice noodles in a dry place.
