Sour Soup with Beef

Fat cattle are thawed ahead of time.

Chop the ginger and garlic, cut the red hot pepper into small circles, and cut the pickled mountain pepper into sections.

Remove the roots and wash the enoki mushrooms, soak the vermicelli in advance to soften.

Pour a few drops of oil into a pot of boiling water, add enoki mushrooms and vermicelli to blanch them.

Drain and spread in a large bowl.

Pour in the boiling water, add the beef slices and blanch until the color changes, immediately remove and drain for use. Use a strainer to filter out the scum of the beef for use.

Pour a little oil in the pot, add the minced ginger and garlic until fragrant, add the yellow lantern chili sauce, soaked Sanjiao section, soaked Sanjiao water and stir fry for about one minute.

Pour the boiled beef soup, add cooking wine and bring to a boil over high heat.

Add pepper, salt, white vinegar, and sugar to taste, add the blanched beef slices and cook slightly and turn off the heat.
