Soak the soybeans in water for half an hour

Cut dried chili into circles, wash all other ingredients except rock sugar and set aside, slice and shred ginger, mince garlic

Put water in the pot to boil, add the pig's feet and cook for about one minute to remove the blood

Re-start the pan, add oil, add dried chili, a little ginger and garlic and saute until fragrant. This step can also be replaced by melting the sugar to color the trotters, but I like the wonderful taste of ginger and minced garlic after sautéing, so I use this method

Then add white wine and stir well, because I like the aroma of white wine, I didn’t put cooking wine

Pour in light soy sauce and dark soy sauce and stir well
