Soy Sauce Pigtail

The pigtails are chopped into pieces according to their sections, and washed with water to remove their hair.

Heat a pot with oil, shallots, ginger slices, garlic, and mushrooms until fragrant, then add pig tails and stir until slightly charred.

Add soy sauce, sugar, and appropriate amount of water to simmer for more than half an hour.

When the pigtails are cooked, collect the juice on high heat, sprinkle a little sesame oil and pepper and stir well.

Take out the pan and serve.
