Soy Trotter Soup

Wash the trotters and chop them into pieces, soak the soy beans and wash them

Bring water to a boil in the pot, put in the trotters, cooking wine and 5 slices of ginger, and boil the blood of the trotters over high heat

Wash the trotters out

Add water, soybeans, trotters, green onions, and ginger slices to the casserole

Start simmering on high heat for 15 minutes. Do not cover the pot during this period, which can effectively release some refreshing flavor. Then, simmer on low heat for about 1 and a half hours until the soup is white. Add salt and sprinkle pepper to taste.
