Spiced Peanuts

Soak the peanut kernels in wash water for 20 minutes

Take some spices that you like, such as star anise, cinnamon, bay leaf, pepper, grass fruit and set aside

Pour the peanuts, rice and water into the pot, add salt and spices and cook together. The water must be under the peanuts. It doesn’t matter if the water is more than the peanuts. After the water boils, simmer on low heat for 30 minutes.

Take the peanuts out, control the water, and fry them until the skin is dry and loose. This step is very important. If the skin is not dry, just pour coarse salt into the pot, the salt will easily blend into the skin of the peanuts , Peanuts will be very salty

When the skin of the peanuts is dry, change the fire to pour coarse salt and continue to fry until the water in the peanuts is almost volatilized. Separate the peanuts from the salt and put them in a container without a cover until the peanuts become cool. When you eat peanuts, it will be very crispy (I don’t have a timer for how long I fry. I personally feel that the oil in the fry can be felt. The fried salt can be saved for next time. This step can also be changed to Bake in the oven, spread tin foil on the baking tray, spread the peanuts on the baking tray, the temperature is 160°, the middle layer is heated up and down, and the time is 20-25 minutes)
