Spiced Tea Egg

Rinse the surface of the egg with clean water. Don't look at the surface is dirty, but it is best to clean it, because the surface of the egg has small breathing holes. If there is dirt, it will enter the inside of the egg when it is cooked.

Add a proper amount of water to the pot, add the cleaned eggs, add more clean water, preferably under the eggs, then cook for about 12 minutes on medium-high heat and then remove;

Add 1 spoon of black tea, 2 star anise, 1 small piece of cinnamon, 3 pieces of bay leaves, 1 spoon of cumin, 2 spoons of dark soy sauce, 1 spoon of light soy sauce, 2 pieces of rock sugar, and appropriate amount of salt in a boiling pot. Bring to a boil over high heat;

Remove the boiled eggs and put them in cold water. After the temperature is not hot, remove the water to control the water, so that the egg shell and the egg can be better peeled off, and then use a spatula, spoon or rolling pin to gently rub it with a hard object such as a spatula, spoon or rolling pin. Crack the egg shell until there are cracks in the egg shell;

Then put the eggs in the water, and continue to cook for about 10 minutes. Cover the pot and simmer for 1 night until it is fully flavored. If the temperature is high, you can put the brine and eggs in the refrigerator;
Tips:
1. If everyone is in a hurry, cook it in a pressure cooker to taste faster;
2. Boil the eggs in a pot under cold water, so that the eggs are cooked completely and not broken;
