Spiced Tea Egg Dried Tofu

The main ingredients are ready: the tofu is made of strong-tasting old tofu or northern tofu, the big kidney beans are fully soaked in cold water one night in advance, and the shell is cleaned with eggs;

Put the big kidney beans and eggs in a pot of water first, cook on low heat for 8 minutes;

Cut tofu into thick finger-thick chunks;

Pour a little oil in a non-stick pan, fry the tofu golden brown on both sides over a low fire, and shape it so that it will not break when marinated;

Take out the boiled eggs and big kidney beans, and the eggs can be peeled easily with cold water;

Prepare the marinade: star anise, pepper, cinnamon, bay leaf, dried red pepper, green onion, ginger, green tea I use, just a pinch; other marinades can be adjusted in variety and dosage according to preference;

Put the marinade, salt, soy sauce, and appropriate amount of water into the pot and bring to a boil on high heat;

Put the big kidney beans, eggs, and dried tofu into the pot in turn, soak them in brine as much as possible, and cook for 10 minutes to turn off the heat;

Soak it in the marinade for at least 1 hour if it can be refrigerated overnight.

Tips:
1. For tofu, northern tofu or old tofu has less water content, is well shaped, and has a firm texture. It is not easy to break when marinated, and it can keep the shape intact after frying;
2. The main ingredients of the marinade are not limited to these 3 kinds, but can also be replaced with other kinds such as yuba, kelp, tofu skin, etc.; removing the tea leaves is the five-spice stewed flavor;
3. You can use more marinade at a time, put it in the refrigerator, and eat two meals; the marinade is not wasted, add some water and salt, and you can continue to marinate one more pot;
4. Although the eggs are good, don't eat too much at one meal. Under normal circumstances, it is better for the elderly to eat 1 to 2 a day.
