Spiced Tiger Eggs

The eggs are cooked in water and the shell is peeled off.

Put the peeled eggs in a container, add some light soy sauce, dark soy sauce, and water to marinate for 1 hour, and finally turn them over halfway.

This is the egg I have marinated for 2 hours, take it out and drain it.

Add broth, light soy sauce, dark soy sauce, green onion, ginger, rock sugar, salt, and ingredients (star anise, cinnamon, bay leaves, and pepper) in the pot and boil.

Pour into a bowl and let cool to form a marinade.

Heat an appropriate amount of rapeseed oil in the pot, and add the drained eggs.

Fry until the outer skin is tiger skin color.

Take it out and immediately soak it in the marinade for half an hour.
9.
Remove and eat.
Tips:
The eggs are marinated with light soy sauce and dark soy sauce in order to fry them to get a good-looking tiger skin color. Because the soaked soy sauce water does not submerge the eggs, it is best to turn the eggs halfway. The remaining brine can continue to be used, such as braised beef, smoked fish, and dried tofu.
