Spiced Tripe

If it is 150 grams of cooked tripe, this step 1.2.3. can be omitted.
Above this picture is a pound of tripe:
Wash the tripe with salt on the front and back, and cut into small sections

Boil in boiling water for 5 minutes, tear off a layer of film on the surface, and rinse again

Add hot water to the electric pressure cooker to mince the tripe (and 3 catties of beef), and add the marinated bag (a short piece of cinnamon, 2 pieces of grass fruit, 4 pieces of bay leaves, 3 star anises, 2 dried chilies, and a pinch of Chinese pepper) , 4 rock sugar) 3 tablespoons of cooking wine, 3 tablespoons of soy sauce, 2 tablespoons of light soy sauce, press the button (bean/ tendon) to marinate for 30 minutes, remove the beef first, and cook the tripe intermittently for another 30 minutes. (Because beef is easier to cook than tripe)

150g tripe, 2 hot peppers, shredded, sliced ginger and garlic, and cut coriander into sections

Heat a pan with cold oil, add ginger and garlic to a small heat and sauté

Add green pepper shreds

Add the tripe shreds and turn it over high heat for a few seconds, add a spoonful of chili sauce and some salt to quickly stir-fry, during which you can spray a little hot water along the side of the pan

Finally, add the coriander and stir well.
