Spicy chicken is a famous dish in Sichuan and Chongqing, named after Chongqing Gele Mountain. This dish has a bright red brown oil color and a strong spicy taste. Salty and mellow, with a slight sweetness. Generally, it is made with chicken as the main ingredient, plus onions, dried chilies, pepper, salt, pepper, monosodium glutamate and other materials. It is rich in nutrients and delicious. Although it is the same dish, it has its own characteristics in different regions.

Spicy Chicken

1. Prepare the chicken breasts.

2. Dice chicken breasts.

3. Add red oil, salt, soy sauce, pepper, chicken essence, starch and marinate for 10 minutes.

4. Prepare the ingredients, cut red pepper and green pepper into sections, dice garlic, and cut ginger into rice.

5. Remove the oil from the pan, wait until the oil temperature is 3-4% hot, add the diced chicken, remove the oil (about 30 seconds to remove)

6. Drain the oil.

7. Leave the oil in the original pot, add ginger rice, diced garlic, red pepper sections, saute with a small amount of salt, and add a spoonful of soup to taste.

8. Add the oily chicken and mix evenly, sprinkle the green onion, and pour the red oil out of the pan.

Tips:

Diced chicken will be out of the pan in 30 seconds at most when it is oily. It will grow old and lose toughness after a long time.
The best starch is potato flour.
