Spicy Chicken

Soak the chicken in blood and rinse with water, drain the water, and chop into small pieces.

Add cooking wine, light soy sauce, white pepper, and a little salt, stir evenly and marinate for about 30 minutes.

Soak the dried red pepper for about 15 minutes, cut into small pieces and put together the peppercorns.

Cut green onion into sections, slice ginger and garlic.

The marinated chicken nuggets are deep-fried in a 60% hot oil pan for about 3 minutes, until the surface is slightly yellow, remove and set aside.

Increase the oil temperature to 80% hot, pour in the chicken nuggets and fry it quickly for about 10 seconds until the surface is golden and remove the oil.

Leave the bottom oil in the pot, add ginger and garlic slices and saute until fragrant.

Pour in dried red pepper and peppercorns and stir-fry until dry and fragrant.

Pour in the fried chicken pieces and stir-fry evenly, add sugar and cooked white sesame seeds and stir-fry evenly.

Add the chives at the end.
