Spicy Chicken Feet

Wash the chicken feet and cut off the toes.

Cut from the middle of the chicken feet and cut in half.

Cut dried chili into sections and slice ginger.

Wash and chop the shallots.

Boil water in a pot, add chicken feet and half of the ginger slices.

Put it in the cooking wine and blanch it up.

Wash the blanched chicken feet and drain the water.

Heat oil in a pot, add the remaining ginger slices and chili to fragrant.

Add the chicken feet and stir fry a few times.

Add a spoonful of braised soy sauce and stir fry for color.

Put an appropriate amount of water and boil for ten minutes.

Season the remaining 1/3 of the water with salt and cook for another two minutes.

Collect the sauce over high heat, add the chicken essence and stir-fry evenly.
14.
Sprinkle chopped green onion and turn off the heat.
