Spicy Cold Mushroom

Cut off the old part of the enoki mushroom, wash and tear into small portions.

Cut the pepper into rings, mince garlic, and cut parsley and green onions into small pieces.

Boil water in a pot, add a few drops of oil and a little salt, and boil the enoki mushrooms to soften.

Put the cooked enoki mushrooms out, drain the water and set aside.

Take a large bowl, add Zhitian pepper, minced garlic, and a spoonful of fried chili.

Add hot peanut oil, light soy sauce, balsamic vinegar, salt, chicken essence, and sesame oil, mix well and make a cold sauce.

Pour the mixed cold sauce evenly on top of the enoki mushrooms.

Sprinkle some coriander and chopped green onion.

Tips:
Flammulina velutipes is easy to be cooked after being torn into small portions. It should not be cooked too long in the pot, and it can be served when it becomes soft.
