Spicy Fried Clams

Put the clams in a pot and add twice as much water as the clams

Lift the basin with your hands and turn it clockwise for a while to rinse the dirt on the outer skin

Change a basin of water and add a spoon of salt

Sesame oil

Mix well and let stand for 2 hours to let the clams spit out the mud

Rinse and drain

Peel garlic, wash and mince, cut dried chili into sections, and cut coriander into sections

Pour oil in a pot and heat up, add minced garlic and sauté

Add the chili section and stir fry for a spicy taste

Pour the clams and stir fry over high heat

After the clam shells are fully opened, pour in the soy sauce and stir well

Add coriander and stir well, add a little salt to taste
Tips:
The clams are rich in umami flavor. Don't add MSG or add more salt during cooking to prevent the umami from reducing. The clams should be eaten after spitting in sand and frying thoroughly. Clams are cold and cold, so those with deficiency of the spleen and stomach should not eat more.
