Spicy Fried Clams

1. Wash the clams, boil for 30 seconds and remove them for later use.

2. Heat oil in a pot and add dried chili shreds until fragrant.

3. Stir in Pixian bean paste and stir-fry with red oil, then add green onion, ginger, garlic and fry until fragrant.

4. Add the clams, add salt, light soy sauce, and oyster sauce.

5. Stir-fry evenly until the clams open.

6. Add the coriander and stir-fry for a few times.

Tips:

Put the clams in the water, add a little salt, or add a small amount of pepper oil (to speed up the spit of clams), soak for 2 hours, and then clean them.
