Spicy Fried Clams

Soak the clams in warm salt water to remove the sediment.

Put water in the pot and boil, add the clams, and cook until the mouth is slightly opened. Rinse the clams with water again to clean up the sand. This method is to remove the mud and sand of the clams, and the other is to make the clams more ripe. But the disadvantage is that it will lose the umami taste of the clams.

Cut chives into sections, shred ginger, and slice garlic for later use.
