Spicy Fried Squid

Dried squid is soaked with edible alkali in advance, soak in the evening and rinse with clean water for 2 hours.

Add a tablespoon of white wine to the hot water in the pot to boil.

Pour the soaked squid slices into boiling water, blanch for two minutes, remove cold water and rinse for later use.

Prepare all ingredients.

Add oil to the hot pan, add ginger, garlic, hot pepper, pepper and bean paste, and stir fry for a while.

Turn to high heat and pour the squid and stir continuously.

When the soup is out, turn to low heat, add cooking wine and white vinegar, add a little water to the squid, cover the pot and stew on medium heat.

Tips:
1. The squid has a strong flavor, so put more cooking wine vinegar.
2. After blanching the squid, rinse it with cold water to make the meat tighter.
3. The squid tastes better after being refrigerated.
