Spicy Lotus Root

Prepare all the ingredients.

Peel and dice lotus roots and soak in water.
3.
Dice the fragrant dried ham and dice the green and red peppers.

Pour olive oil into the wok and sauté the onion and ginger.

Pour the chili sauce to explode the aroma of the chili sauce.

Pour in the lotus root and stir fry.

Pour in a little cold water and continue to fry for a while.

Add sugar, then add salt and continue to stir fry.

Tips:
The lotus root is soaked in clean water, and white vinegar can be added to the water to prevent the lotus root from discoloring.
I use Hunan Chili Sauce, which can also be made with chopped peppers.
Finally, add some balsamic vinegar to enhance the flavor and make the lotus root more crispy.
