Spicy Saliva Chicken

Prepare the raw materials, because the US is about to celebrate the holidays, supermarkets are selling discounts and buying a lot of fresh and cheap chicken drumsticks.

Wash the chicken legs, put it in the pot, add cold water, green onion, ginger, star anise, cinnamon, white wine and boil over high heat to remove floating bubbles, change to low heat and simmer for 10 minutes, turn off the heat and simmer for 15 minutes (do not lift the lid).

Prepare the ice cubes with water, put the braised chicken drumsticks in ice water and chill until the chicken drumsticks are completely cold.

Stir-fry the peanuts (fried peanuts, see my recipe for details), let cool, peel them, put them in a sealed food bag, and crush them with a rolling pin.

Place ground peanuts, cooked sesame seeds, chili powder, pepper powder, and salt in a small bowl and set aside

Heat the pot, add vegetable oil, add sliced ginger, green onion, garlic, pepper, cinnamon, star anise, and fry on low heat until the ginger and green onion are shrunk and dried (showing a healthy brown color). Close Heat, strain the seasoning in the pot with a colander, leaving only the oil.

Pour the fried hot oil into a bowl containing crushed peanuts and chili, and quickly stir with chopsticks (note: do not pour in the fried onion, ginger, garlic, use a strainer or strainer)
