Spicy Screws

Cut off the butt of the bought screws and put them in clean water, add a little oil and salt and leave them for 3-5 hours, let the screws spit out all the stolen goods, then rub them 3-5 times with water, and then rub them again with salt and vinegar.

Put the washed screws into the pot and dry fry, just like fried peanuts without adding any seasoning. When you smell the burnt aroma, quickly add cold water and rub it again. It is very important to note this step. This is to meet the cooked screw meat. The cold shrinkage is detached from the shell, and the screws produced in this way are easily sucked out.

Heat the pan with oil, chop the ginger, garlic, and dried chili into the pan until fragrant, then stir-fry the screws in the pan, add a little cooking wine, 50g light soy sauce, 10g dark soy sauce, 3 star anise and appropriate amount of cinnamon. Salt, add water and submerge the screws and simmer for 15 minutes on medium heat. After the screws are fully flavored, put the sauce in the pan and sprinkle some chopped green onions on the plate. A delicious spicy screw is complete.
