Spicy Spare Ribs

Wash the ribs, put them in a pot, pour in water, cooking wine, green onions and ginger, blanch them, remove them for use

Heat oil in a pot, add star anise, cinnamon, and bay leaves to sauté until fragrant

Add the ribs, stir-fry the water, add light soy sauce, dark soy sauce, rock sugar and stir fry

Pour in boiling water, over the ribs, bring to a boil, add green onion, ginger, garlic and dried chili, cover the pot and simmer on low heat

Simmer for about 20 minutes, add peanuts, cover and simmer

Simmer for about 10 minutes, add the potatoes cut into rolls, cover and simmer

After simmering for about 10 minutes, open the lid, simmer on high heat, add salt to taste, collect the sauce, and cook the ribs for a total of about 40 minutes.

The ribs with potatoes and peanuts are really delicious
Tips:
1. Potatoes should not be put too early to prevent the stew from being too bad
2. When collecting the juice, keep stirring to prevent the bottom from sticking.
